Rum

Rum is a distilled beverage made from sugarcane by-products such as molasses and sugarcane juice by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in wooden barrels, Most Rum is made in and around the Carribean Islands.

Rum in my opion is divided into 3 main catergorys White, Gold and Dark. Normaly the older the Darker.... Not always, just a good rule of thumb.

Goslings Family Resere XO

Description: Dark
155 years seems long enough. So the deep, dark secret rum that we Goslings have enjoyed for generations is now going public. Appropriately called Gosling's Family Reserve Old Rum, it is crafted from the same incomparable Bermuda blend that they use for their renowned Black Seal Rum. But, they leave it resting in oak barrels even longer, aging it until it has acquired an extra luscious, nuanced complexity much like a rare Scotch or Cognac. Consider it the ultimate sipping rum.

A spirit this unusual deserves more than the usual bottle and label. So they lovingly take each bottle, hand label it, dip it in wax, number it, encircle it with a metal band and then place it in a straw-filled wooden box reminiscent of days past. Finally, with not too modern merchandising, they substitute a clear Plexiglass sliding panel for wood, so that all this hard work can be viewed at home.

Gosling's point? Old Rum is built to savour as it is poured. Add ice if you must, but nothing else other than a little eager anticipation.

Pussers 15yrs

Description:
The superb rum in this bottle has not only been aged in wood for 15 years, but has also been distilled in wood.

It is the world's only rum, or for that matter the world's only spirit, that is still distilled in wood using the old, inefiicient, handcrafted way in opposition to the modern method that employs semi-automatic metal column distillation.

For 330 years from about 1640 until July 31st, 1970, Great Britain's Royal Navy issued a daily rum ration to the sailors on board its ships. The daily ration was known as a tot, and its issue and the ritual that went with it was one of the longest and unbroken traditions in the history of the sea.

The rum used was a special rum called Navy or Admiralty Rum, or Pussers. Pussers being a corruption of the word pirser, after the officer in charge of the ship's supplies. Pussers Navy Rum today is the identical rum that was issued in the Royal Navy right up until the time of the custom's termination on July 31st, 1970. Pussers is known for both its colourful history and its rich flavour. It was never sold or available to the public until 1979. If a connoiseur obtained a tot or two, he valued it for a very special occasion because there was nothing else like it.

The Pussers 15 year old is exceptional and equivalent to the finest cognac or brandy in every way. Interestingly, at the end of 15 years of aging in wood, only about 7% of the original rum remains in the barrel. the balance will have evaporated into the air. Thus it toof the equivalent of about 16 bottles of rum to produce this single bottle of 15 year old Pussers!

This rum is truly for sipping, as you would a fine cognac. It is best enjoyed slighlty chilled at about 13C to 16C or 55F to 60F.

English Harbour Five Year Rum continues to win international prestigious awards. The Five year Rum received a Double Gold Medal Award for the second consecutive year in the prestigious San Francisco World Spirits Competition in the USA, ranking English Harbour Five year Rum as one of the Best Rums in the world. Held in March 2005, the San Francisco World Spirits Competition's expert panel of judges conducted blind taste tests, over a total of 589 entries from over 43 countries, awarding medals based on taste alone.

Havana Club's

Cockspur

This fine golden rum is matured slowly in American white oak barrels before being expertly blended to create the final product.

Significantly smoother on the palate than many other brown spirits, the quality stands out whether it's straight or mixed. The agreeable distinctive flavour is great on the rocks but equally best mixed with your favourite mixer or in cocktails.

In Barbados, Cockspur & Coke is a popular favourite. Five Star is light and golden in colour with an uncomplicated, pleasant smell. Its taste is extremely smooth, round and warm, which becomes spicy on the palate, getting slightly buttery towards the end.

Bacardi

After 23 years of experimentation, Don Facundo Bacardi set the standard for all future premium white rum. Established in 1862 in Santiago de Cuba Bacardi Superior Rum became the world's first premium aged white rum. To produce such a superior spirit Don Facundo combined the best of dark spirits production techniques (ageing and blending) with his pioneering filtration process (charcoal filtration, now used by other white spirits) to create the perfectly balanced mixing rum that neither overpowers nor disappears in your drink.

Due to Bacardi Superior Rum's perfectly balanced taste it was used by cocktail pioneers as the principle ingredient in the birth of the world's best known rum cocktails including the Mojito (1860s), later featured in the 1931 book called Cuban Cookery, the Daiquiri (1896), the Cuba Libre (1900) and the Bacardi Cocktail TM (1917).
